Cooking shows are broadcast on almost all TV channels during prime times, but apparently independent cooking is an exception. According to a study by the food company "Nestlé" fewer and fewer Germans are taking their time to eat. But the Nestlé study shouldn't be entirely unselfish. The group wants to further expand the area of ​​"healthy nutrition" and has founded a scientific institute especially for this. The former head of research at the American biotechnology company ViaCyte, Emmanuel Baetge, is to head this institute.

A healthy diet is important to a majority The results of the Nestlé study do not seem new. While a healthy diet will become increasingly important, a large number of consumers do not see that they pay more for food. 60 percent of those questioned said it was important that the animals were kept appropriately beforehand, but only about half (33 percent) would spend more money on them. The information is approximately the same for genetic engineering. 62 percent emphasized that they did not want to eat genetically modified products, only about 27 percent would have to pay more for this.

Working life to blame for the lack of eating structures. The well-considered reasons do not seem new. As society is developing at an ever faster pace, familiar daytime structures are lost. Since 2009, the proportion of those who have to complain about different or different daily routines has increased. For 20- to 29-year-olds from 47 percent to 52 percent, for working people from 37 percent to 41 percent. The profession increasingly promotes the replacement of a constant daily structure. Every sixth working person works around 50 hours or more per week. 17 percent of those surveyed regularly work shifts, and around 10 percent are self-employed or self-employed.

Such a derailment of the structure naturally also has an impact on the diet. This shows that people who have an unregulated daily routine also consume irregular food. Instead of following the feeling of hunger, many postpone their food intake to a free time window. Of the study participants with a relatively irregular daily schedule, 43 percent eat when the opportunity arises, 31 percent when they are hungry and only 20 percent at fixed times of the day. Many also simply grab a snack in between to compensate for the time between meals.

Common diseases caused by unhealthy diet Other studies in this connection repeatedly point to the connection between the unhealthy lifestyle in the western world and the massive increase in diseases such as obesity, diabetes, heart attack and cancer. All of these diseases are now considered to be widespread diseases, since the disease rate increases from year to year.

"Healthy food" from the food industry Food companies such as Nestlé have long recognized this trend. Overall, there is an increasing interest among consumers in a healthy diet, but most people are unable to abandon the lifestyle due to professional constraints. For some time now, the group has been committed to "healthy eating". “Personalized health nutrition” is being promoted so that “efficient and inexpensive ways” can be found to prevent and treat acute and chronic diseases of the 21st century ”(1). A new subsidiary called “Nestle Health Science” was founded especially for this. The newly invented products should help to promote "good health and a long life", as the company announced in September 2010. New knowledge about aging, the influence of genes and environmental factors should play an important role in the design.

The concept of "functional food" is not new. For example, food manufacturers advertise that a special margarine "protects the cardiovascular system". Scientists at the Leipzig University Clinic, however, advised caution last year because some of these products contain herbal substitutes. These substances are supposed to replace animal fats and lower cholesterol levels. However, in some patients with certain genetic predispositions, these substances are excreted significantly worse. This increases the sterol level in the body and increases the risk of heart attack. Such phytosterols can be found in margarine, mayonnaise, yoghurts or spray cream. (sb)
